400 g seitan steak, cut wafer-thin
1 pck. rocket
1 piece(s) vegan Parmesan cheese, freshly shaved
2 lemon(s), the juice
100 g pine nuts
Balsamic vinegar
Olive oil, extra virgin
Pepper, black, from the mill
Sea salt

Try this vegan twist on a classic Italian dish: seitan carpaccio. Thin slices of savoury seitan steak are topped with a refreshing arugula salad, crunchy pine nuts, and shavings of vegan Parmesan. Drizzled with balsamic vinegar and olive oil dressing, this dish is sure to impress. Serve with a side of toasty baguette for a satisfying meal.

Instructions

1.Drizzle 4 plates with balsamic vinegar and spread with a brush so that the entire plate is thinly covered.
2.Toast the pine nuts and wash the rocket.
3.Place the thin slices of seitan steak, the rocket and the pine nuts on the plates and shave the Parmesan very thinly over them. Now season with salt, lemon juice and pepper and drizzle the olive oil over the top. You can also add a little balsamic vinegar.
4.Serve immediately with the baguette.
5.To make it easier to cut the seitan steak into wafer-thin slices, freeze the steak a little beforehand. To do this, you can place the somewhat thicker slices between two freezer bags and carefully beating them flat with a meat tenderiser or a casserole dish. Alternatively, you can use a very sharp knife or a slicing machine.
