118 mL of vegetable oil
a pinch of salt
125 g of all-purpose flour
15 g of sugar

Instructions

1.In a medium saucepan, bring the water, vegetable oil, and salt to a boil over medium heat.
2.In a medium bowl, mix together the flour and sugar. Gradually add the dry ingredients to the boiling water and oil, stirring constantly until the mixture forms a smooth dough.
3.Transfer the dough to a pastry bag fitted with a large star tip.
4.In a large, deep saucepan or Dutch oven, heat about 2 inches of oil over medium-high heat until it reaches 190°C.
5.Carefully pipe the dough into the hot oil, using a knife to cut it into 4-inch pieces. Fry the churros in batches, making sure not to overcrowd the pan, until they are golden brown on both sides. This should take about 2-3 minutes per side.
6.Using a slotted spoon or tongs, remove the churros from the oil and transfer them to a plate lined with paper towels to drain any excess oil.
7.While the churros are still hot, dust them with sugar and serve immediately.
